🥞 Carnivore Protein Pancakes

High-Protein | No-Carb | 100% Animal-Based

🍳 Ingredients (Makes 4–5 small pancakes):

  • 4 large eggs

  • 1/2 cup cottage cheese (or ricotta — high in protein)

  • 2 tbsp beef protein isolate or unflavored whey protein (optional, for extra protein boost)

  • 1 tbsp butter or beef tallow (for cooking)

  • Pinch of salt

  • Optional: 1/2 tsp vanilla extract or cinnamon (omit for strict carnivore)

🔥 Instructions:

  1. Blend it: Add eggs, cottage cheese, protein powder (if using), and salt into a blender or bowl. Blend or whisk until smooth and creamy.

  2. Heat skillet: Add butter or tallow to a non-stick or cast iron pan over medium-low heat.

  3. Pour batter: Scoop 2–3 tbsp of batter per pancake into the hot skillet. Don’t overcrowd.

  4. Cook: Let them cook ~2–3 minutes per side, until golden and firm. Flip carefully.

  5. Serve hot! Top with butter, whipped cream, or melted beef fat (yes, it’s good!).

💪 Nutrition (Approx. per batch):

  • Protein: ~40–50g (more if you use protein powder)

  • Fat: ~30g

  • Carbs: ~1–2g (from cottage cheese — near zero net)

🥩 Optional Add-Ins (Carnivore-ish):

  • 1–2 tbsp pork rind crumbs for texture

  • 1 tbsp cream cheese instead of cottage cheese

  • Crumbled bacon in the batter

🔄 Variations:

  • Strict version: Just eggs + beef protein powder + tallow

  • Sweet version (keto/carnivore blend): Add a touch of allulose or whipped cream on top

Want a zero-dairy or beef-only version? I can tweak it for that too!
