🍳 Ingredients (Makes 4–5 small pancakes):

1/2 cup cottage cheese (or ricotta — high in protein)

2 tbsp beef protein isolate or unflavored whey protein (optional, for extra protein boost)

1 tbsp butter or beef tallow (for cooking)

🔥 Instructions:

Blend it: Add eggs, cottage cheese, protein powder (if using), and salt into a blender or bowl. Blend or whisk until smooth and creamy.

Heat skillet: Add butter or tallow to a non-stick or cast iron pan over medium-low heat.

Pour batter: Scoop 2–3 tbsp of batter per pancake into the hot skillet. Don’t overcrowd.
