🥩 Carnivore Ricotta Meatballs
Ingredients:

1/2 lb ground pork or veal (optional for flavor)

1/2 cup full-fat ricotta cheese

1/4 cup grated Parmesan or Pecorino Romano (optional, for extra umami)

1 large egg

1 tsp salt

1/2 tsp black pepper (omit for strict carnivore)

1/2 tsp garlic powder (optional; omit for strict carnivore)

1 tbsp beef tallow, butter, or ghee (for cooking)
🔥 Instructions:
1. Mix the Meatballs:

In a large bowl, combine ground meat, ricotta, egg, cheese, salt, and seasonings (if using).

Mix gently until just combined — don’t overwork the mixture.
2. Shape:

Roll into golf ball–sized meatballs (about 1.5 inches in diameter).
3. Cook:
Option A – Pan-Sear + Bake:

Heat tallow or butter in an oven-safe skillet over medium-high.

Brown meatballs on all sides (about 2–3 minutes total).

Transfer skillet to a preheated oven at 375°F (190°C) and bake for 10–12 minutes until cooked through.
Option B – Fully Pan-Fried:

Cook meatballs over medium heat in a heavy skillet, turning to brown all sides, about 8–10 minutes total.
