Carnivore Sausage and Egg Biscuit
Ingredients:

For the Sausage Patties:
- 1 lb ground pork (or a mix of ground pork and beef if preferred)
- 1/2 tsp sea salt (or to taste)
- 1/4 tsp black pepper (optional, can be omitted for stricter carnivores)
- 1 tsp garlic powder (optional)
- 1/2 tsp dried sage (optional)
- 1/4 tsp red pepper flakes (optional, for a little heat)

- 4 large eggs
- 1/4 cup heavy whipping cream (HWC)
- 2 tbsp butter (melted, or use more if needed)
- 1/4 tsp salt
- 1/4 tsp garlic powder (optional)
- 1/4 tsp baking soda (optional, but helps with fluffiness)
- 1/2 tsp apple cider vinegar (to activate baking soda, optional for fluffiness)

For the Egg and Cheese:
- 4 large eggs (for frying, 1 egg per sandwich)
- Optional: Carnivore-friendly cheese slices (cheddar, mozzarella, etc.), if you allow dairy

- Duck fat, beef tallow, or butter (for frying)
Instructions:

Make the Sausage Patties:
- In a bowl, mix the ground pork with salt, pepper, garlic powder, sage, and red pepper flakes.
- Form the sausage mixture into 4-6 patties, depending on your desired size.
- Heat a pan over medium-high heat and cook the sausage patties for about 4-5 minutes per side, or until browned and cooked through (160°F internal temperature).

Make the Biscuit “Bread”:
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together the eggs, heavy whipping cream, melted butter, salt, garlic powder, and apple cider vinegar.
- If you’re using baking soda, mix it with the vinegar before adding it to the egg mixture to activate the rise.
- Pour the egg mixture into a well-greased or parchment-lined muffin tin or use a silicone mold. You’ll want each biscuit to be about 2-3 inches in diameter.
- Bake for about 15-20 minutes, or until the tops are golden brown and the “biscuit” has set (a toothpick should come out clean).

- In a separate pan, fry the eggs to your desired doneness, sunny side up or over-easy works well here.

Assemble the Sandwich:
- Slice each egg “biscuit” in half (horizontally).
- Place a sausage patty on the bottom half of the “biscuit.”
- Top with a fried egg.
- Optional: Add a slice of cheese on top of the egg (if you allow dairy).
- Place the other half of the biscuit on top to complete the sandwich.

Tips:
