Ingredients:

  • 1 large egg

  • 2 tbsp shredded Parmesan or mozzarella (finely grated)

  • 1 tbsp cream cheese (or softened butter)

  • 1 tsp beef gelatin powder (optional — helps structure)

  • Pinch of salt (optional)

  • Butter, bacon grease, or tallow for the pan

Zero-Carb Tip: Use aged Parmesan or zero-carb mozzarella. Omit cream cheese if needed — swap in more shredded cheese or a little extra egg.


Instructions:

  1. Mix the “Batter”:
    In a bowl, mix:

    • 1 egg

    • 2 tbsp shredded cheese

    • 1 tbsp cream cheese (or soft butter)

    • (Optional) 1 tsp gelatin powder
      Whisk well until fully combined and smooth.

  2. Cook the Toast:
    Heat a nonstick skillet over medium heat and add a small amount of butter or tallow.
    Pour the mixture into the pan and spread it into a toast-sized rectangle or circle about ¼” thick.

  3. Fry Until Golden:
    Cook 3–5 minutes per side, until golden brown and crisp on the outside but cooked through. Flip carefully with a thin spatula.

  4. Cool & Crisp:
    Let cool for 2–3 minutes on a rack — it firms up and crisps as it cools.


🧈 How to Serve:

  • Spread with butter, cheese spread, or carnivore cream

  • Top with egg salad, tuna, or bacon + cream cheese

  • Use as a base for open-faced burgers or mini sandwiches


🥶 Storage:

  • Fridge: Up to 3 days in a sealed container

  • Freezer: Freeze between parchment sheets, reheat in skillet or air fryer


🔄 Variations:

  • Cheesy Toast: Add more Parmesan for a crisper version

  • Egg-Only Toast: Use 1 egg + 1 tbsp melted butter + pinch salt (no cheese)

  • Microwave Version: Pour into a greased ramekin and microwave 60–90 seconds, then toast in a dry pan
