Carnivore Whipped Brown Butter Bites
Ingredients:

1 cup unsalted butter (grass-fed butter like Kerrygold is ideal)

1 tsp sea salt (or more to taste)

Optional: A sprinkle of powdered beef gelatin (for firmness, but optional)

Optional: A pinch of ground beef tallow or rendered pork fat (for added richness and flavor)
Instructions:

Brown the Butter:

In a medium-sized saucepan, melt the butter over medium heat. Once melted, reduce the heat slightly and continue to cook, stirring occasionally. The butter will start to foam and then turn golden brown. Keep an eye on it so it doesn’t burn.

After it becomes brown and has a nutty aroma, remove it from the heat and let it cool to room temperature.

Whip the Butter:

Once the brown butter has cooled, pour it into a mixing bowl. Use a hand mixer or stand mixer to whip it for about 4-5 minutes until it becomes light and airy. It should form soft peaks.

Optional Add-ins:

If you’re using a pinch of beef tallow or pork fat, you can add it to the butter mixture at this point. This step will enhance the flavor and richness. You can also add a small amount of powdered beef gelatin to give the bites more structure if you prefer a more solid consistency.

Spoon the whipped brown butter into a silicone mold, ice cube tray, or just form small dollops on parchment paper.

Place them in the fridge to firm up for about 1-2 hours, or until they hold their shape.

Once set, pop them out of the mold or remove them from the parchment. They can be stored in the fridge for up to a week or frozen for longer storage.
