Cheese Chocolate Banana Bread
A moist, protein-rich banana bread that tastes like dessert but is actually healthy. Perfect for breakfast, snacks, or a guilt-free treat.
Ingredients:
- 1 cup cottage cheese
- 2 ripe bananas, mashed
- 2 eggs
- 1 cup oat flour
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup or stevia
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 cup dark chocolate chips
Directions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal later. - Blend Cottage Cheese:
In a blender or food processor, blend the cottage cheese until smooth and creamy. - Mash the Bananas:
In a large mixing bowl, mash the bananas thoroughly. - Combine Wet Ingredients:
Add the eggs, blended cottage cheese, maple syrup (or stevia), and vanilla extract to the mashed bananas. Stir until all ingredients are well combined. - Mix Dry Ingredients:
Add the oat flour, cocoa powder, and baking powder to the wet ingredients. Stir well until a smooth batter forms. - Add Chocolate Chips:
Gently fold in the dark chocolate chips, saving a few for sprinkling on top of the batter. - Pour Batter into Loaf Pan:
Pour the batter into the prepared loaf pan. Smooth out the top with a spatula. Sprinkle the remaining chocolate chips on top. - Bake:
Bake for 35-40 minutes or until a toothpick inserted in the center of the loaf comes out clean. - Cool and Slice:
Let the banana bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Once cooled, slice and serve!
