CHEESY TACO POTATO SKILLET WITH AVOCADO DRESSING
INGREDIENTS:
1 pound ground beef or ground turkey
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
4 medium potatoes, diced
1 packet taco seasoning
1 cup shredded cheddar cheese
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
For the Avocado Dressing:
1 ripe avocado
1/2 cup Greek yogurt
1 tablespoon lime juice
Salt and pepper to taste
INSTRUCTIONS:
STEP 1: COOK THE MEAT
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute. Add the ground beef or turkey, breaking it apart with a spoon, and cook until browned. Drain any excess fat.
STEP 2: ADD POTATOES AND SEASONING
Stir in the diced potatoes and taco seasoning. Add a splash of water if needed to help the potatoes cook. Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
