Chicken and cheese omelette
Ingredients:
- 2 large eggs
- 1/4 cup cooked chicken (shredded or diced)
- 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1 tbsp butter or oil
- Salt and pepper to taste
- Optional toppings: chopped herbs (parsley, chives), diced tomatoes, onions, or bell peppers

Prepare the chicken:
- If you’re using leftover chicken, shred or dice it into small pieces. If you don’t have leftover chicken, you can quickly cook some in a pan with a bit of oil and seasoning, then set aside.

Beat the eggs:
- Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until well combined.

Cook the omelette:
- Heat the butter or oil in a non-stick skillet over medium heat.
- Once the butter is melted and hot, pour in the beaten eggs. Tilt the pan to spread the eggs evenly.

Add the chicken and cheese:
- When the eggs start to set (after about 1-2 minutes), add the cooked chicken evenly across one half of the omelette.
- Sprinkle the shredded cheese over the chicken.

Fold and cook:
- Once the eggs are fully set (but still soft on top), carefully fold the omelette in half using a spatula to cover the chicken and cheese.
- Let it cook for another 1-2 minutes until the cheese melts and the omelette is golden brown.

Serve:
- Slide the omelette onto a plate and serve hot with any optional toppings you like, such as fresh herbs or veggies.
