Chicken and cheese omelette

Ingredients:

  • 2 large eggs
  • 1/4 cup cooked chicken (shredded or diced)
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 tbsp butter or oil
  • Salt and pepper to taste
  • Optional toppings: chopped herbs (parsley, chives), diced tomatoes, onions, or bell peppers

Instructions:

  1. Prepare the chicken:

    • If you’re using leftover chicken, shred or dice it into small pieces. If you don’t have leftover chicken, you can quickly cook some in a pan with a bit of oil and seasoning, then set aside.
  2. Beat the eggs:

    • Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until well combined.
  3. Cook the omelette:

    • Heat the butter or oil in a non-stick skillet over medium heat.
    • Once the butter is melted and hot, pour in the beaten eggs. Tilt the pan to spread the eggs evenly.
  4. Add the chicken and cheese:

    • When the eggs start to set (after about 1-2 minutes), add the cooked chicken evenly across one half of the omelette.
    • Sprinkle the shredded cheese over the chicken.
  5. Fold and cook:

    • Once the eggs are fully set (but still soft on top), carefully fold the omelette in half using a spatula to cover the chicken and cheese.
    • Let it cook for another 1-2 minutes until the cheese melts and the omelette is golden brown.
  6. Serve:

    • Slide the omelette onto a plate and serve hot with any optional toppings you like, such as fresh herbs or veggies.
