Chicken and Mushroom Stir Fry

Ingredients:
Chicken breast: 1 lb (450 g), cut into thin strips
Soy sauce: 3 tablespoons
Cornstarch: 1 tablespoon
Vegetable oil: 2 tablespoons
Garlic: 3 cloves, minced
Fresh ginger: 1 teaspoon, minced
Mushrooms: 8 oz (225 g), sliced
Bell pepper: 1 medium, thinly sliced (any color)
Green onions: 2 stalks, chopped
Oyster sauce: 2 tablespoons
Chicken broth: 1/4 cup (60 ml)
Sesame oil: 1 teaspoon
Black pepper: 1/2 teaspoon
Instructions:
Marinate the chicken:
In a bowl, combine the chicken strips, 2 tablespoons of soy sauce, and cornstarch. Mix well and set aside for 10-15 minutes to marinate.
Prepare the sauce:
In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, oyster sauce, chicken broth, sesame oil, and black pepper. Set aside.
Cook the chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for 4-5 minutes until browned and fully cooked. Remove the chicken from the pan and set aside.
Saute vegetables:
In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add garlic and ginger, cooking for about 30 seconds until fragrant.
Add the mushrooms and bell pepper, cooking for 3-4 minutes until softened.
Combine chicken and sauce:
Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables, stirring to combine. Cook for another 2-3 minutes until the sauce thickens slightly.
Finish with green onions:
Add the chopped green onions and stir to incorporate.
Serve:
Serve hot over steamed rice or noodles for a complete meal.
