Cowboy Butter Steak Sliders (Carnivore Version)
Ingredients:

1 lb ribeye or sirloin steak (or any steak of your choice), sliced thinly

2 tbsp beef tallow, ghee, or butter for cooking the steak

1 tbsp fresh parsley, chopped (optional)

1 tbsp lemon juice (optional, for brightness)

1/2 tsp smoked paprika (optional)

1/2 tsp Dijon mustard (optional, if you allow a bit of mustard)

For Assembling:

4-6 carnivore-friendly “buns” or slider options (you can use cheese crisps or egg-based buns, or make a cheese crust to hold the steak for a fully carnivore version)

4-6 slices of cheddar or Swiss cheese (optional)

Additional Cowboy Butter for drizzling

Instructions:

Prepare the Cowboy Butter:

In a small bowl, mix the softened butter, ghee (if using), minced garlic, parsley, lemon juice, smoked paprika, and Dijon mustard.

Stir until everything is well combined.

Season with salt and pepper to taste.

Set the Cowboy Butter aside, or store it in the fridge for later use. It can also be made ahead of time.

Cook the Steak:

Season the steak slices with salt and pepper.

Heat the beef tallow, ghee, or butter in a large skillet over medium-high heat.

Once the skillet is hot, add the thinly sliced steak and cook for about 3-4 minutes until it’s browned and cooked to your desired level of doneness.

Remove the steak from the skillet and set it aside to rest.

Prepare the Sliders:

If you’re using cheese crisps or an egg-based bun for the slider base, preheat your oven to 375°F (190°C) and bake your buns (or cheese crisps) for about 5 minutes until golden and crispy.

You can also create a cheese crust by melting shredded cheese in a skillet and allowing it to harden into a firm crust, which works great as a carnivore-friendly bun.

Assemble the Sliders:

If you’re using cheese crisps or a cheese crust, place a slice of cheddar or Swiss cheese (if desired) on the bottom “bun.”

Add a generous amount of the cooked steak on top of the cheese.

Top with another cheese crisp or cheese crust (if using).

If you’re keeping it strict carnivore, skip the Dijon mustard and lemon juice, or use a very small amount of each. You could also skip the parsley or garlic if you’re avoiding plant-based ingredients entirely.

For the “buns,” if you’re not a fan of cheese crisps, you could always opt for a carnivore “cloud bread” (egg-based bread) as a base for the sliders.
