Creamy Crab and Shrimp Seafood Bisque

Ingredients:
For the Bisque Base:
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour (for thickening)
- 1/2 cup white wine (optional, but adds depth)
- 2 cups seafood stock or chicken broth
- 1 cup heavy cream
- 1/2 cup milk
- 1/4 cup tomato paste
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper (optional for heat)
- Salt & black pepper to taste
For the Seafood:
- 1/2 lb shrimp, peeled, deveined, and chopped
- 1/2 lb lump crab meat (or imitation crab if preferred)
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions:
- Sauté Aromatics
- In a large pot, melt butter over medium heat.
- Add onions and cook until soft (about 3 minutes).
- Stir in garlic and cook for another 30 seconds until fragrant.
- Build the Base
- Stir in flour and cook for 1 minute, stirring constantly.
- Slowly add white wine, whisking to deglaze the pot.
- Pour in seafood stock, heavy cream, milk, tomato paste, paprika, cayenne, salt, and pepper.
- Simmer the Bisque
- Bring to a gentle simmer and cook for 10 minutes, stirring occasionally.
- Add the Seafood
- Stir in shrimp and crab, then simmer for 5-7 minutes until shrimp turns pink.
- Add lemon juice and stir to enhance the flavors.
