Crusted salmon with pesto and steak with basil cream
Ingredients:
For salmon and steak:
2 salmon fillets
2 steaks (ribeye, filet mignon, or your favorite cut)
Salt and pepper to taste
2 tablespoons of the olive oil
1/4 cup pesto sauce (store bought or homemade)
For the basil cream sauce:
1 cup of heavy cream
2 tablespoons of olive oil
1/4 cup fresh basil leaves, finely chopped
1 chopped garlic clove
1 tablespoon of grated parmesan
Salt and pepper to taste
Instructions:
1. Prepare the salmon and steak:
Preheat the oven to 400°F (200°C).
Season salmon fillets and steaks with salt and pepper.
Spread a thin layer of pesto sauce over each salmon fillet, gently pressing to stick to the pesto.
Heat 1 tablespoon of olive oil over medium-high heat in a skillet.
Poach salmon fillets upside down for 2-3 minutes until skin is brown. Transfer to oven and bake for 7-10 minutes depending on thickness, until cooked through.
For steaks, heat another tablespoon of olive oil in the same skillet over medium-high heat. Cook the steaks for about 3-4 minutes on each side or until your desired donut level is reached. Let the steaks sit a few minutes before serving.
2. Prepare the basil cream sauce:
In a small saucepan, add olive oil over medium heat.
Add minced garlic and simmer for 1-2 minutes until fragrant.
Pour heavy cream and simmer.
Stir in chopped basil and grated parmesan, and cook for 3-4 minutes, stirring occasionally, until sauce thickens.
Season with salt and black pepper to taste
3. Servir :
Place salmon fillets and pesto crusted steaks on a serving tray.
Drizzle the basil cream sauce generously on top of each dish.
Garnish with extra fresh basil and parmesan leaves, if desired.
