🥯 Fluff Bun (Carnivore Bread)
Makes 2 large buns or 4 smaller ones
Ingredients:

8 egg whites (save the yolks for the mayo!)

4 tbsp OVO Protein egg white powder (or similar high-quality egg white protein)

½ tsp baking powder (aluminum-free)

Pinch of salt (optional)
Instructions:

Preheat air fryer to 160°C (320°F).

Whisk the egg whites in a large clean bowl until stiff peaks form (use an electric mixer for best results).

Gently fold in the egg white powder and baking powder. Fold carefully to avoid deflating the foam.

Scoop the mixture into bun shapes on parchment paper or into silicone bun molds.

Air fry at 160°C for 12 minutes.

Turn off the air fryer but leave the buns inside to cool slowly for about 10-15 minutes. This helps them set without collapsing.

Once cooled, remove and slice — they’ll look and feel like real buns!
🍔 The Best Carnivore Burger Ever
Ingredients (per burger):

1 fluff bun (from above)

1 beef burger patty (100–150g, seasoned with salt only)
-
1 slice high-quality cheese (cheddar, gouda, or even provolone)

Pork crackling (a few small crispy pieces)
-
1 fried egg (cooked to your liking)

1 tbsp Carnivore Mayo (recipe below)
🥚 Carnivore Mayo
Rich, creamy, egg-based carnivore-friendly mayo.
Ingredients:

2 egg yolks (from the bun whites)
-
½ cup melted beef tallow or bacon fat (cooled slightly but still liquid)
-
½ tsp Dijon mustard (optional, omit if strict carnivore)

Salt to taste

Splash of lemon juice or apple cider vinegar (optional for flavor)
Instructions:

Add egg yolks and mustard (if using) to a small bowl.

Start whisking while slowly drizzling in the melted fat until emulsified and creamy.

Add salt and optional vinegar or lemon juice to taste.
🔧 Assembly:

Slice the fluff bun and toast lightly (optional).

Place your seared beef patty on the bottom half.
-
Melt the cheese over the patty.
-
Add crispy pork crackling on top.
-
Top with a fried egg.

Slather the top bun with carnivore mayo.
