A vibrant, crunchy mix of fresh veggies, savory meats, briny olives, and creamy cheese—tossed in a zesty Italian vinaigrette for the perfect hearty salad!
Ingredients 🛒
2 cups chopped romaine or kale
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup yellow bell pepper, diced
1/2 cup canned chickpeas, drained
1/4 cup kalamata olives
1/4 cup marinated artichoke hearts
1/4 cup mozzarella pearls or diced cheese
1/4 cup sliced pepperoncini
1/4 cup sliced salami
2 tbsp chopped parsley
Italian Dressing 🥄
1/4 cup olive oil
2 tbsp red wine vinegar
1/2 tsp dried oregano
1/2 tsp garlic powder
Salt & pepper, to taste
Juice of 1/2 lemon
Directions 👩‍🍳
1️⃣ Chop & Combine: Add all salad ingredients to a large bowl.
2️⃣ Whisk Dressing: In a small bowl, whisk together all vinaigrette ingredients.
3️⃣ Toss & Serve: Pour dressing over salad and toss to combine. Serve immediately or chill for 20 minutes.
