Ingredients You’ll Need to Make This Ground Beef and Potatoes:
- 2 tablespoons olive oil
- 24 oz frozen diced hashbrown potatoes
- 1 lb lean ground beef
- 2 cups frozen corn
- 1 medium green bell pepper, diced
- 1 medium red bell pepper, diced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 10.5 oz cream of mushroom soup
- 1 1/3 cups shredded cheddar cheese
- chopped green onions (optional)
How to Make Ground Beef and Potatoes:
- Heat the olive oil in a large skillet over medium-high heat.
- Once the oil is hot add the frozen hashbrown potatoes to the skillet.
- Stir and cook until the potatoes just start to brown.
- Add the ground beef to the skillet.
- Crumble the ground beef well as it cooks.
- Once the ground beef is fully cooked add the corn to the skillet and stir well.
- Add the diced green and red peppers to the skillet.
- Stir well and continue cooking for 5 minutes.
- Then add the salt, pepper, garlic powder, onion powder and mushroom soup to the skillet.
- Stir well until all of the ground beef and potatoes are coated in mushroom soup.
- Add 1 cup of the shredded cheddar to the skillet and stir until the cheese is melted.
- Sprinkle the remaining 1/3 cup of shredded cheddar on top and do not stir.
- Remove the skillet from the heat.
- Sprinkle chopped green onions on top before serving if desired.
