Ingredients
- 4 medium sweet potatoes (halved lengthwise) 🍠
- 1 cup cherry tomatoes, halved 🍅
- 2 tbsp olive oil 🫒
- Salt & pepper, to taste 🧂
- 1/2 cup pesto (store-bought or homemade) 🌿
- 8 oz burrata cheese, torn into pieces 🧀
- Fresh basil leaves, for garnish 🍃
Instructions
1. Roast the Sweet Potatoes & Tomatoes
- Preheat the oven to 400°F (200°C).
- Place the halved sweet potatoes on a baking sheet, cut-side up.
- Drizzle with 1 tbsp olive oil, sprinkle with salt & pepper, and roast for 25-30 minutes until tender and slightly caramelized.
- In the last 10 minutes of roasting, toss the cherry tomatoes with 1 tbsp olive oil, salt, and pepper, and add them to the baking sheet. Roast until they start to blister.
2. Assemble the Sweet Potato Bites
- Remove the sweet potatoes and tomatoes from the oven.
- Top each sweet potato half with a piece of burrata cheese.
- Spoon pesto over the top, allowing it to drizzle over the sides.
- Add roasted cherry tomatoes on top and around the sweet potatoes.
3. Garnish & Serve
- Sprinkle with fresh basil leaves.
- Add an extra drizzle of olive oil and a pinch of black pepper.
