Mediterranean Spinach and Feta Crisps Recipe
Yields: 12-15 crisps
Prep Time: 15 minutes
Cook Time: 10-12 minutes
Ingredients:
- 1 cup fresh spinach, washed and chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil spray (for greasing)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper or lightly spray it with olive oil to prevent sticking.
- Prepare the Spinach:
- Wash and chop the fresh spinach into small pieces. Make sure itβs well-drained to avoid excess moisture in the mixture.
- Mix the Ingredients:
- In a large mixing bowl, combine the chopped spinach, crumbled feta cheese, flour, grated Parmesan, beaten eggs, garlic powder, dried oregano, and salt and pepper.
- Stir everything together until the mixture is well combined. The mixture should be thick enough to hold its shape when scooped onto the baking sheet.
- Form the Crisps:
- Using a spoon or your hands, form small 1-2 inch mounds of the mixture and place them onto the prepared baking sheet. Gently flatten each mound to form a small round shape, about 1/2 inch thick. Make sure theyβre spaced about 2 inches apart.
- Spray with Olive Oil:
- Lightly spray the tops of the crisps with olive oil spray to help them crisp up during baking.
- Bake:
- Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown and the crisps are firm.
- Cool and Serve:
- Remove from the oven and let the crisps cool for a few minutes on the baking sheet. Then, transfer them to a wire rack to cool completely.
- Serve and Enjoy:
- Serve these Mediterranean Spinach and Feta Crisps warm as an appetizer, snack, or a side dish. They are perfect on their own or paired with a dipping sauce like tzatziki or hummus.
Tips:
- For Extra Crispness: If you prefer even crispier edges, bake the crisps a little longer, keeping an eye on them so they donβt burn.
- Add Herbs: Feel free to add fresh or dried herbs like basil or thyme for an extra layer of flavor.
- Storage: Store any leftover crisps in an airtight container at room temperature for 2-3 days. Reheat them in the oven for a few minutes to bring back their crispiness.
Enjoy your Mediterranean Spinach and Feta Crisps! They are savory, crispy, and packed with Mediterranean flavors! Perfect for sharing or snacking! πΏπ§π½
