1/2 teaspoon ground ginger (or 1 teaspoon fresh ginger, minced)

2 cloves garlic, minced

For the stir fry:

1 tablespoon olive oil

1 lb (450 g) boneless, skinless chicken breasts, thinly sliced

1/2 teaspoon salt

1/4 teaspoon ground black pepper

2 cups fresh string beans, trimmed and cut into 1-2 inch pieces

1 medium red bell pepper, sliced (optional, for color)

1 medium onion, sliced (optional)

2 tablespoons water

Instructions:

Make the sauce:

In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, sugar, cornstarch, water, sesame oil, ginger, and garlic. Set aside.

Prepare the chicken and vegetables:

Cut the chicken breasts (450 g) into thin strips.

Trim and cut the string beans (about 2 cups) into 1-2 inch pieces. You can also slice the red bell pepper and onion if you’re using them.

Stir-fry the chicken:

Heat the olive oil in a large skillet or wok over medium-high heat.

Add the chicken strips to the pan. Season with salt and pepper. Stir-fry for 5-6 minutes, or until the chicken is cooked through and slightly browned. Remove from the pan and set aside.

Cook the vegetables:

In the same skillet, add the string beans and any additional vegetables, like onions or bell peppers. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Add 2 tablespoons of water and continue to cook for another 2-3 minutes until the beans are tender but still vibrant in color.

Combine and cook:

Return the cooked chicken to the pan with the vegetables. Stir in the prepared sauce and cook for 2-3 minutes, until the sauce has thickened and coats the chicken and vegetables.

Stir well to ensure everything is evenly coated with the sauce.

Serve:
