Ingredients:

For the Steak:

  • 2 ribeye steaks (6 oz each)
  • 1 tablespoon olive oil

  • Salt and black pepper, to taste

For the Eggs:

  • 4 large eggs
  • 1 tablespoon butter
  • Salt and pepper, to taste

For the Hash Browns:

  • 2 large russet potatoes, peeled and shredded
  • 1/2 small onion, grated
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • Salt and pepper, to taste
  • 1/4 cup vegetable oil, for frying

Directions:

1. Prepare the Hash Browns:

  • In a large bowl, combine shredded potatoes and grated onion. Squeeze out as much liquid as possible using a cheesecloth or paper towels.
  • Add flour, beaten egg, salt, and pepper to the potato mixture and mix until everything is combined.
  • Heat vegetable oil in a large skillet over medium heat. Form the potato mixture into small patties and fry for about 3-4 minutes per side, until golden brown. Drain on paper towels and set aside.

2. Cook the Steaks:

  • Generously season both sides of the ribeye steaks with salt and pepper.
  • Heat olive oil in a cast-iron skillet over high heat. Sear the steaks for 2-3 minutes per side to create a nice crust.
  • Reduce heat to medium, add butter, garlic, and rosemary to the skillet, and continue to baste the steaks with the melted butter for 1-2 minutes, or until you reach your desired doneness (about 4-5 minutes for medium-rare).
  • Remove the steaks from the skillet and let them rest for about 5 minutes.

3. Cook the Eggs:

  • In a non-stick skillet, melt butter over medium heat.
  • Crack eggs into the skillet and cook them to your liking (sunny-side up, over-easy, or scrambled). Season with salt and pepper.

4. Assemble and Serve:

  • Plate the steak, eggs, and crispy hash browns together.
  • Garnish with fresh parsley if desired and serve immediately.
