Perfect Steak and Eggs Breakfast (Serves 2)
Ingredients:
For the Steak:
- 2 ribeye steaks (6 oz each)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 cloves garlic, smashed
- 2 sprigs fresh rosemary
- Salt and black pepper, to taste
For the Eggs:
- 4 large eggs
- 1 tablespoon butter
- Salt and pepper, to taste
For the Hash Browns:
- 2 large russet potatoes, peeled and shredded
- 1/2 small onion, grated
- 1/4 cup all-purpose flour
- 1 egg, beaten
- Salt and pepper, to taste
- 1/4 cup vegetable oil, for frying
Directions:
1. Prepare the Hash Browns:
- In a large bowl, combine shredded potatoes and grated onion. Squeeze out as much liquid as possible using a cheesecloth or paper towels.
- Add flour, beaten egg, salt, and pepper to the potato mixture and mix until everything is combined.
- Heat vegetable oil in a large skillet over medium heat. Form the potato mixture into small patties and fry for about 3-4 minutes per side, until golden brown. Drain on paper towels and set aside.
2. Cook the Steaks:
- Generously season both sides of the ribeye steaks with salt and pepper.
- Heat olive oil in a cast-iron skillet over high heat. Sear the steaks for 2-3 minutes per side to create a nice crust.
- Reduce heat to medium, add butter, garlic, and rosemary to the skillet, and continue to baste the steaks with the melted butter for 1-2 minutes, or until you reach your desired doneness (about 4-5 minutes for medium-rare).
- Remove the steaks from the skillet and let them rest for about 5 minutes.
3. Cook the Eggs:
- In a non-stick skillet, melt butter over medium heat.
- Crack eggs into the skillet and cook them to your liking (sunny-side up, over-easy, or scrambled). Season with salt and pepper.
4. Assemble and Serve:
- Plate the steak, eggs, and crispy hash browns together.
- Garnish with fresh parsley if desired and serve immediately.
