🥩 Poor Man Husband Casserole (CARNIVORE Version)
🍳 Ingredients:

1.5 lbs ground beef (80/20 or whatever’s cheapest)

6 eggs

1 cup ricotta cheese (or cottage cheese, drained)

1.5 cups shredded cheddar (or mozzarella, or a mix)

4 oz cream cheese

Salt to taste

Optional: Crumbled bacon, pork rinds, or leftover sausage
🔪 Instructions:

Preheat oven:
To 375°F (190°C). -
Cook the ground beef:
In a skillet, brown ground beef over medium heat. Season with salt. Drain excess fat (or keep it if you want the extra calories/fat). -
Mix ricotta & eggs:
In a bowl, whisk 6 eggs and mix in ricotta cheese and softened cream cheese. Stir until mostly smooth. This becomes the creamy binder layer. -
Layer it up in a baking dish:
Use a 9×9 or 8×8 casserole dish:-
Bottom layer: half the cooked ground beef

Middle layer: the egg + cheese mixture

Top layer: the rest of the ground beef

Final topping: sprinkle all the shredded cheese

Bake:
Place in the oven and bake for 30–35 minutes, or until the top is golden and bubbly, and center is set. -
Cool slightly & serve:
Let it sit for 5–10 minutes before slicing. It firms up as it cools.
