Potato and Spinach Bake (No Meat)

Ingredients:
- 1 kg potatoes
- Water (for boiling)
- Salt to taste
- 3 cloves of garlic (minced)
- 40g butter
- 1 carrot (grated)
- 1 onion (chopped)
- 200g spinach (chopped)
- 200ml heavy cream
- 150g cheese (grated, for topping)
- Black pepper to taste
- ½ tsp nutmeg (optional)
Instructions:
- Prepare the Potatoes:
- Peel and slice the potatoes into thin rounds.
- Boil them in salted water for about 10 minutes until just tender, but not falling apart. Drain and set aside.
- Prepare the Vegetable Mix:
- In a pan, melt the butter and sauté the minced garlic and chopped onion until soft.
- Add the grated carrot and spinach, cook for a few minutes until wilted.
- Pour in the heavy cream and season with salt, black pepper, and nutmeg. Stir well and let simmer for 2 minutes.
- Assemble the Dish:
- Preheat the oven to 180°C (350°F).
- In individual baking dishes (or one large dish), layer half of the cooked potatoes.
- Spread the spinach mixture evenly over the potatoes.
- Add another layer of potatoes on top.
- Sprinkle grated cheese generously over the top.
- Bake:
- Place in the oven and bake for 20-25 minutes or until the top is golden brown and bubbling.
- Serve:
