Ingredients (Makes 8-10 Patties):
✔ 2 zucchini (grated & squeezed dry)
✔ 2 potatoes (grated & squeezed dry)
✔ 1 carrot (grated)
✔ 1 small onion (finely chopped or grated)
✔ 1 sprig of parsley (chopped)
✔ ½ teaspoon salt
✔ ½ teaspoon black pepper
✔ ½ teaspoon garlic powder (optional)
✔ 1 egg (for binding)
✔ 3 tablespoons flour or breadcrumbs (for texture & crispiness)
✔ Vegetable oil (for frying)
Instructions:
Step 1: Prepare the Vegetables
- Grate the zucchini and potatoes, then squeeze out excess water using a towel.
- Grate the carrot and onion, then finely chop the parsley.
- In a large bowl, mix all the grated veggies with salt, pepper, garlic powder, egg, and flour/breadcrumbs.
Step 2: Shape & Fry
- Heat oil in a pan over medium heat.
- Shape the mixture into small patties and place them in the hot oil.
- Fry for 3-4 minutes per side until golden brown and crispy.
- Remove and place on a paper towel to absorb excess oil.
