Quick breakfast sandwich 🤩
Ingredients:
-
For the “Bread” Base:
- 1 large egg (separate the white and yolk)
- 1/4 tsp salt (or to taste)
- 2 tbsp ground pork rinds (to add texture)
-
For the Filling:
- Leftover cooked meat (e.g., beef, chicken, pork, etc.)
- 2-4 slices of Mangalica bacon (or other high-fat, good quality bacon), diced
- Optional: Any herbs or seasonings you like (garlic powder, onion powder, pepper, etc.)
-
For Cooking:
- Small greased baking dish or air fryer-safe mold
Instructions:
Step 1: Prepare the “Bread” Base
- Preheat the air fryer: Set your air fryer to 150°C (about 300°F) and let it preheat.
- Whisk the egg whites: In a clean, dry bowl, whisk the egg whites with the salt until they form stiff peaks. This will give the dish a light and fluffy texture.
- Add the yolk: Gently add the egg yolk to the whipped egg whites and continue whisking until the mixture is fluffy and fully combined.
- Fold in the pork rinds: Carefully fold the ground pork rinds into the egg mixture using a spatula. Be gentle to avoid deflating the egg whites too much.
Step 2: Bake the “Bread” Base
- Prepare the baking dish: Grease a small baking dish or an air fryer-safe mold to ensure the bread doesn’t stick.
- Spoon the mixture: Spoon the egg and pork rind mixture into the baking dish, spreading it out evenly.
- Bake in the air fryer: Place the dish into the preheated air fryer and cook at 150°C (300°F) for about 15 minutes. The “bread” should rise and become slightly golden on top.
Step 3: Prepare the Filling
- Cook the bacon: While the “bread” is baking, chop the Mangalica or other high-fat bacon into small pieces and cook it in a skillet over medium heat until crispy. Remove the bacon from the pan and set it aside.
- Warm up the leftover meat: In the same skillet (or another pan), warm up your leftover cooked meat, shredding or chopping it into bite-sized pieces. Season it to taste if necessary, adding a bit of salt, pepper, or other spices of your choice.
Step 4: Assemble and Serve
- Cool the “bread” slightly: Once the “bread” is done baking, remove it from the air fryer and let it cool slightly for 5 minutes.
- Slice the “bread”: Cut the “bread” in half horizontally to create a top and bottom.
- Fill with meat and bacon: Spoon the warmed leftover meat onto the bottom half of the “bread,” then sprinkle the crispy bacon on top. Place the top half of the “bread” over the filling to create a sandwich or open-faced meal.
- Serve: Slice into halves or quarters and serve immediately!
