Quick & Easy Cauliflower Tots with Cottage Cheese
Ingredients:
1 head of cauliflower
1 cup plain cottage cheese
1/2 cup bread crumbs
1/2 cup grated parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped scallions
1 egg
Instructions:
Preheat and prepare cauliflower:
Preheat your oven to 400°F (200°C).
Steam or boil cauliflower florets until tender (about 5–7 minutes).
Drain well and let cool slightly.
Mash and mix ingredients:
Mash the cooled cauliflower in a mixing bowl until smooth.
Add cottage cheese, egg, garlic powder, onion powder, salt, and pepper.
Mix until well combined.
Form the tots:
Gradually add breadcrumbs to the cauliflower mixture.
The mixture should hold together but not be too dry.
Scoop small portions and shape them into tots, keeping them uniform for even baking.
Bake the cauliflower tots:
Line a baking sheet with parchment paper.
Place the tots on the sheet, leaving space between each one.
Bake for 20–25 minutes or until golden brown and crispy.
Serve and enjoy:
Let cool slightly before serving.
Pair with your favorite dipping sauce like ranch, honey mustard, or marinara.
Notes:
For crispier tots, lightly spray them with cooking oil before baking.
For extra crunch, use panko instead of regular breadcrumbs.
Storage tip: Store in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in the oven at 375°F (190°C) for best results.
