How to Render Grass-Fed Tallow at Home

Ingredients:

  • 3-5 lbs of suet (raw beef fat, preferably from grass-fed beef)
  • Water (optional, helps prevent burning during the initial rendering process)

Equipment:

  • Large stockpot or slow cooker
  • Sharp knife (to trim the suet)
  • Fine mesh strainer or cheesecloth
  • Glass jar or container (for storing the tallow)
  • Spatula or wooden spoon
  • Large spoon (for skimming off impurities)

Instructions:

Step 1: Prepare the Suet

  1. Trim the suet: Begin by removing any membranes, tendons, or gristle from the suet (the raw beef fat) that you receive from the butcher. This will help ensure a cleaner, smoother tallow.

  2. Cut the suet into small pieces: Use a sharp knife to chop the suet into small cubes or strips. The smaller the pieces, the quicker the fat will render down into liquid.

Step 2: Rendering the Tallow

There are two main methods to render tallow: stovetop or slow cooker. Both methods work well, so choose based on what you have available.

Stovetop Method:

  1. Place the suet in a large stockpot: Add your chopped suet into the large stockpot. If you prefer, you can add a small amount of water (about 1/4 to 1/2 cup) to the bottom to help prevent the fat from burning in the early stages. This will evaporate during the process.

  2. Slowly heat the fat: Set the pot over low to medium heat. Let the suet melt gradually. As it melts, stir occasionally with a wooden spoon to prevent burning and ensure the fat is breaking down evenly.

  3. Skim off impurities: As the fat melts, you’ll notice foam or impurities rising to the top. Skim these off with a spoon and discard them. This will leave you with a pure, clean tallow.

  4. Continue simmering: Let the fat simmer for 1-2 hours, occasionally stirring, until the suet is fully melted and the liquid fat is clear.

Slow Cooker Method:

  1. Place the suet in a slow cooker: Add the suet into the slow cooker, no need to add water unless you’re concerned about burning early on.

  2. Set to low heat: Turn your slow cooker to low heat. This method will take longer, but you can let it cook slowly over 6-8 hours.

  3. Stir occasionally: Stir the fat once in a while to ensure even rendering and to prevent it from sticking to the bottom. The fat will gradually break down.

  4. Skim off impurities: As with the stovetop method, skim off any impurities as the fat renders down.

Step 3: Strain and Store the Tallow

  1. Strain the rendered tallow: Once the suet has fully melted and you’re left with a clear liquid, strain the tallow using a fine mesh strainer or cheesecloth into a clean, heat-resistant container or glass jar. This will remove any leftover bits of suet and leave you with clean tallow.

  2. Let it cool: Allow the tallow to cool to room temperature. It will solidify into a smooth, creamy white fat as it cools.

  3. Store your tallow: Store your homemade tallow in airtight glass jars or containers. You can keep it in the fridge for months or at room temperature for up to several weeks. For long-term storage, tallow can also be frozen.

Step 4: Enjoy!

  • Now you have homemade, nutrient-dense tallow ready for cooking, frying, or even using in skincare.
  • Use it for frying meats, sautéing vegetables (if you include them in your diet), or as a base for soups and stews. The high smoke point of tallow makes it perfect for high-heat cooking.
  • It can also be used in lotion bars or skin-care recipes as it’s rich in vitamins A & D.

Benefits of Homemade Grass-Fed Tallow:

  • Rich in CLA: Conjugated Linoleic Acid (CLA) found in grass-fed tallow can help reduce inflammation and support fat metabolism.
  • High in vitamins A & D: These vitamins are excellent for skin health, immune function, and overall wellness.
  • Nutrient-dense: Tallow is an excellent source of healthy fats, providing sustained energy and promoting better fat-soluble nutrient absorption.

Fun Bonus:

  • Zero waste: This is a great way to use the suet, which might otherwise be discarded, making it an eco-friendly and budget-friendly way to create high-quality fat at home.

Now you have a batch of grass-fed tallow made with minimal effort and maximum health benefits! Enjoy it in your cooking and experience the rich flavor it adds to your meals.
