Ingredients :
– 150 g of goat cheese
– 2 oranges peeled and cut into segments
– 100 grams of peeled pistachios
– 3 medium beets, roasted and cut into cubes
– 1 tablespoon of honey
– 2 tablespoons of olive oil
– 1 tablespoon of balsamic vinegar
– Salt and pepper to taste
– Some arugula leaves for garnish

Instructions:
1. Preheat your oven to 200°C. Wrap the beets in tin foil and roast for about 45 minutes, or until tender.
2. While the beets are roasting, prepare the whipped goat cheese. In a bowl grate goat cheese and add honey. Whisk until the mixture is creamy and homogeneous.
3. In a large salad bowl, combine beetroot cubes, orange slices and pistachios.
4. In a small bowl, mix the olive oil, balsamic vinegar, salt and pepper. Pour this dressing over the salad and mix gently.
5. To serve, drop salad on plates, add tablespoons of whipped goat cheese, and garnish with arugula.
