Savory Breakfast Bowl with Sausage, Roasted Potatoes, Scrambled Eggs & Avocado 



For the Roasted Potatoes:
2 medium red potatoes (cubed)
1 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp salt
For the Breakfast Sausages:
4-5 breakfast sausages
For the Scrambled Eggs:
2 large eggs
1 tbsp butter
Salt and black pepper to taste
For the Avocado:
1/2 avocado (sliced)
Pinch of salt


Preheat oven to 400°F (200°C).
Toss cubed potatoes with olive oil, smoked paprika, garlic powder, black pepper, and salt.
Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through.

In a skillet over medium heat, cook sausages until browned and fully cooked (about 8-10 minutes), turning occasionally.

Melt butter in a pan over low-medium heat.
Whisk eggs with a pinch of salt and add to the pan.
Stir gently until eggs are soft and fluffy.

Slice half an avocado and season with a pinch of salt.

In a bowl, place the roasted potatoes, scrambled eggs, and cooked sausages.
Add sliced avocado on the side for a creamy texture.
