Slow-Cooked Beef Chuck Roast
Ingredients:
- 3-4 lbs beef chuck roast (bone-in or boneless)
- 2 tablespoons beef tallow (or butter, if preferred)
- 2 teaspoons sea salt (or Redmond Real Salt)
- 1 teaspoon black pepper (optional, if tolerated)
- 2-3 garlic cloves, minced (optional)
- 2 sprigs fresh rosemary (optional)
- 1-2 sprigs fresh thyme (optional)
- 1/4 cup beef broth (optional for added moisture, but not necessary for carnivore)
Instructions:
Step 1: Prepare the Roast
- Season the beef: Start by patting the beef chuck roast dry with paper towels to remove excess moisture. This will help the meat sear better. Then, season generously with 2 teaspoons of sea salt and 1 teaspoon of black pepper (optional). You can also rub in minced garlic if you tolerate it, or fresh herbs like rosemary and thyme for added flavor. If you prefer a stronger herb taste, make small slits in the meat and insert a few sprigs of rosemary and thyme directly into the roast.
