Special Carnivore Crackers
Ingredients:
-
1 cup pork rinds (finely crushed to a powder)
-
2 large eggs
-
1/2 cup shredded pork rinds or crispy bacon bits (optional, for extra texture)
-
1/4 tsp salt (optional)
-
1/4 tsp garlic powder or smoked paprika (optional, if you tolerate spices)
Instructions:
-
Preheat oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. -
Prepare pork rind flour:
Crush the pork rinds finely in a food processor or put them in a sealed bag and crush with a rolling pin until powdery. -
Mix ingredients:
In a bowl, whisk eggs. Add crushed pork rinds, salt, and optional spices. Mix until a dough forms. If too wet, add more crushed pork rinds. -
Roll out dough:
Place dough between two sheets of parchment paper and roll out thinly (about 1/8 inch thick). -
Cut crackers:
Remove the top parchment. Cut dough into squares or desired cracker shapes with a knife or pizza cutter. -
Bake:
Bake for 12-15 minutes, until crisp and golden. Watch carefully toward the end to avoid burning. -
Cool:
Let cool completely on a wire rack — they will crisp up more as they cool.
Pro Tips:
-
Store in an airtight container for up to 5 days.
-
Use as a crunchy base for carnivore-friendly toppings or just snack on them plain!
-
You can try mixing in a little grated cheese if dairy fits your carnivore plan.
