Ingredients 🛒

3 medium sweet potatoes
1 tbsp olive oil
2 cups fresh spinach
1 cup mushrooms, sliced
2 cloves garlic, minced
Salt & pepper to taste
1 cup shredded mozzarella or provolone cheese
Fresh basil or parsley (for garnish)

Directions 👩‍🍳

1️⃣ Bake Potatoes: Pierce and bake sweet potatoes at 400°F (200°C) for 45–50 minutes, until fork tender. Cool slightly, then slice in half and scoop out most of the flesh.
2️⃣ Prep Filling: In a skillet, heat olive oil. Add garlic and mushrooms, sauté until softened. Stir in spinach and cook until wilted. Season with salt and pepper.
3️⃣ Stuff & Top: Fill potato skins with the sautéed mixture. Top with shredded cheese.
4️⃣ Bake Again: Return to oven and bake 10–15 minutes until cheese is melted and bubbly.
5️⃣ Serve: Garnish with fresh herbs and serve warm.
