Stuffed Meatloaf Roll (a.k.a. Meat Lover’s Dream Loaf)
Ingredients

1½ lbs (680g) ground beef (80/20 for best flavor)

5 hard-boiled eggs, peeled

8 slices of deli ham

6 slices of cheese (cheddar or mozzarella — or mix it up!)

¼ cup grated Parmesan cheese
-
½ tsp Celtic sea salt (or to taste)

½ tsp black pepper (optional)
-
8-10 slices of bacon (for wrapping)

2 tbsp butter mayo (just mix 1 tbsp butter + 1 tbsp mayo)
Instructions

Preheat oven to 400°F (200°C).

Set up your rolling station:

Lay out a large sheet of parchment paper on a baking sheet or countertop.

Press the ground beef into a large rectangle (about ½ inch thick) right on the paper.

Season the meat with Celtic sea salt and pepper.

Sprinkle the Parmesan evenly across the surface.

Layer the fillings:

Place slices of ham over the meat, leaving a 1-inch border.

Lay cheese slices on top of the ham.
-
Place hard-boiled eggs in a line across the center (end to end).

Roll it up:

Use the parchment paper to help roll the meat into a log, enclosing the fillings.

Pinch and seal the edges and ends tightly so the cheese doesn’t escape during baking.

Wrap in bacon:

Lay bacon slices over the top of the roll, tucking the ends under the meat.

Bake:

Transfer the parchment-wrapped roll to a baking sheet or dish.

Bake for about 40 minutes, or until internal temp hits 160°F (71°C) and bacon is crispy.

Final touch:

Take it out, rest for 5 minutes.

Slather with that butter mayo glaze for an extra silky, savory finish.
