Stuffed Meatloaf Roll (a.k.a. Meat Lover’s Dream Loaf)

Ingredients

  • 1½ lbs (680g) ground beef (80/20 for best flavor)

  • 5 hard-boiled eggs, peeled

  • 8 slices of deli ham

  • 6 slices of cheese (cheddar or mozzarella — or mix it up!)

  • ¼ cup grated Parmesan cheese

  • ½ tsp Celtic sea salt (or to taste)

  • ½ tsp black pepper (optional)

  • 8-10 slices of bacon (for wrapping)

  • 2 tbsp butter mayo (just mix 1 tbsp butter + 1 tbsp mayo)

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Set up your rolling station:

    • Lay out a large sheet of parchment paper on a baking sheet or countertop.

    • Press the ground beef into a large rectangle (about ½ inch thick) right on the paper.

    • Season the meat with Celtic sea salt and pepper.

    • Sprinkle the Parmesan evenly across the surface.

  3. Layer the fillings:

    • Place slices of ham over the meat, leaving a 1-inch border.

    • Lay cheese slices on top of the ham.

    • Place hard-boiled eggs in a line across the center (end to end).

  4. Roll it up:

    • Use the parchment paper to help roll the meat into a log, enclosing the fillings.

    • Pinch and seal the edges and ends tightly so the cheese doesn’t escape during baking.

  5. Wrap in bacon:

    • Lay bacon slices over the top of the roll, tucking the ends under the meat.

  6. Bake:

    • Transfer the parchment-wrapped roll to a baking sheet or dish.

    • Bake for about 40 minutes, or until internal temp hits 160°F (71°C) and bacon is crispy.

  7. Final touch:

    • Take it out, rest for 5 minutes.

    • Slather with that butter mayo glaze for an extra silky, savory finish.

  8. Slice and devour.
