Sweet Potato Cottage Cheese Hash
This hash is my go-to for a quick, satisfying meal—sweet, smoky, and creamy with a protein boost from cottage cheese.
Ingredients
2 medium sweet potatoes, diced (about 400 g)
120 g cottage cheese (½ cup)
15 ml olive oil (1 tbsp)
1 small onion, diced (80 g)
1 red bell pepper, diced (100 g)
2 garlic cloves, minced
1 tsp smoked paprika (2 g)
Salt and pepper, to taste
Fresh parsley, chopped (10 g for garnish)
Instructions
1. Heat olive oil in a skillet over medium heat. Add sweet potatoes, season with salt and pepper, and cook 8–10 minutes, stirring until tender and golden.
2. Add onion and red bell pepper. Cook 4–5 minutes until soft. Stir in garlic and paprika, cook 1 minute more.
3. Remove from heat. Mix in cottage cheese or serve with it spooned on top.
4. Garnish with parsley. Serve warm.
