🍞 Zero-Carb Carnivore Bread (Fluffy, Sliceable & Satisfying)

No almond flour, no psyllium, no carbs — just animal-based goodness.

🔸 Ingredients:

  • 8 large eggs

  • 8 oz cream cheese (or softened butter for firmer bread)

  • 1 cup shredded cheese (mozzarella or cheddar works great)

  • 2 tbsp beef gelatin (NOT collagen – this helps it hold structure)

  • 1/2 tsp baking powder (optional – for fluff; omit for strict carnivore)

  • Pinch of salt

Optional Add-ins:

  • 1–2 tbsp bacon fat or duck fat (for extra flavor & moistness)

  • 1/4 tsp garlic powder or onion powder (if you’re doing relaxed carnivore)


🔸 Instructions:

  1. Preheat oven to 325°F (160°C). Grease a loaf pan or line with parchment paper.

  2. Blend wet ingredients:
    In a large bowl (or blender), mix eggs, cream cheese, and salt until smooth and slightly frothy.

  3. Add cheese & gelatin:
    Stir in shredded cheese, beef gelatin, and baking powder (if using). Let the mixture sit for 3–5 minutes to let the gelatin start working.

  4. Pour & bake:
    Pour batter into your prepared loaf pan. Bake for 40–50 minutes, until golden on top and a toothpick comes out clean.

  5. Cool completely:
    Let it cool in the pan for 10–15 minutes, then transfer to a wire rack. Cool fully before slicing to avoid crumbling.
