Ingredients:

  • 4 large eggs

  • 4 oz cream cheese (optional—omit for strict carnivore)

  • 1 tbsp gelatin powder (unflavored)

  • Pinch of salt (optional)

  • Butter or beef tallow (for cooking)

  • Optional toppings: shredded beef, bacon bits, grated parmesan, egg yolk, or bone marrow


Instructions:

1. Make the Noodle Batter:

In a blender or mixing bowl, combine:

  • 4 eggs

  • 4 oz cream cheese (room temp for easier blending)

  • 1 tbsp gelatin powder

  • A small pinch of salt (if using)

Blend until smooth. The gelatin helps the noodles set and hold shape—don’t skip it unless you’re experimenting.

2. Cook the Batter into a Thin Sheet:

Lightly grease a nonstick pan or skillet with butter or beef tallow and heat over medium-low.

Pour in a thin layer of the batter, just enough to coat the surface. Tilt the pan to spread evenly, like making a crepe.

Cook for 1–2 minutes until set. Flip carefully and cook for another 30 seconds. Transfer to a plate and repeat with remaining batter.

Let each sheet cool slightly before stacking.

3. Slice Into Noodles:

Once cooled, stack the sheets and roll them gently like a burrito. Slice across the roll to make thin noodle strips. You can cut them to your preferred width—thinner for spaghetti-like strands, thicker for fettuccine-style.

4. Heat and Serve:

You can eat the noodles as-is, or toss them in a hot pan with butter, bacon fat, or bone broth for extra flavor. Heat just until warmed through.

Top with shredded meat, crispy bacon, or melted cheese (if tolerated).


Tips & Variations:

  • For strict carnivore, skip cream cheese and use 4 eggs + 1 tbsp gelatin only. The texture will be firmer but still noodle-like.

  • Store leftover noodles in the fridge up to 2 days. Reheat gently in a pan or broth.

  • Add an egg yolk or marrow on top for richness and healthy fats.
