Ingredients:

  • 1 lb steak (ribeye, sirloin, or your favorite cut)
  • 2 tbsp butter (or beef tallow for extra richness)
  • Salt (to taste)

Optional (if you’re flexible):

  • 1 clove garlic, minced (omit for strict carnivore)
  • Crushed crispy beef fat (for texture & flavor)

Instructions:

1️⃣ Prep the Steak

  • Cut the steak into bite-sized cubes.
  • Season generously with salt.

2️⃣ Sear the Steak Bites

  • Heat a cast-iron skillet over high heat until very hot.
  • Add 1 tbsp butter (or tallow) and let it melt.
  • Toss in the steak bites, spreading them out in a single layer.
  • Sear for 1-2 minutes per side until golden brown and crispy.
  • Remove from the pan and set aside.

3️⃣ Make the Butter Sauce

  • In the same skillet, add 1 tbsp more butter (and optional minced garlic).
  • Stir for 30 seconds until melted and fragrant.

4️⃣ Coat & Serve

  • Toss the steak bites back into the pan and coat them in the buttery goodness.
  • Serve immediately, optionally topping with crushed beef fat for extra crunch.
