Carnivore Mayo Parmesan Chicken
Ingredients:
-
4 boneless, skinless chicken breasts (or thighs if you prefer dark meat)
-
1/2 cup mayonnaise (preferably full-fat, and make sure it’s made without sugars or vegetable oils)
-
1/2 cup grated Parmesan cheese (freshly grated is best)
-
1/2 tsp garlic powder (optional, for flavor)
-
1/4 tsp onion powder (optional, for flavor)
-
Salt and pepper to taste
-
1 tbsp olive oil or butter (for greasing the pan)
Instructions:
-
Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with olive oil or butter.
-
Prepare the chicken: Season the chicken breasts with salt and pepper on both sides.
-
Make the mayo-parmesan coating: In a bowl, mix together the mayonnaise, Parmesan cheese, garlic powder, and onion powder (if using). Stir until smooth and well combined.
-
Coat the chicken: Spread a generous amount of the mayo-Parmesan mixture over each chicken breast, covering the top completely.
-
Bake: Place the coated chicken breasts in the prepared baking dish and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the top is golden and slightly crispy.
-
Optional broiling: For an extra crispy top, you can broil the chicken for the last 2-3 minutes of baking.
-
Serve: Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
Tips:
-
This dish pairs well with simple side dishes like sautéed spinach, roasted cauliflower, or even just extra crispy bacon on the side!
-
You can use chicken thighs instead of breasts if you prefer a juicier cut.
