Carnivore Ice Cream Recipe
Ingredients:
-
2 cups heavy cream (full-fat)
-
1 cup unsweetened bone broth or beef gelatin (for texture; optional)
-
3 large egg yolks (adds richness and helps with texture)
-
1/4 cup butter (melted, optional for added creaminess)
-
1 tsp vanilla extract (optional for flavor)
-
1/4 tsp salt (optional, enhances the flavor)
-
1-2 tbsp powdered beef gelatin (optional, helps to make it thicker if desired)
Instructions:
-
Prepare the Egg Yolks:
-
In a medium bowl, whisk together the egg yolks and salt (if using). Set aside.
-
-
Heat the Cream:
-
In a saucepan over medium heat, combine the heavy cream and optional bone broth or beef gelatin (if using). Heat until it’s warm but not boiling, stirring occasionally.
-
-
Temper the Eggs:
-
Slowly pour the warm cream mixture into the egg yolks while whisking continuously. This will gradually raise the temperature of the egg yolks, preventing them from scrambling.
-
Once the egg yolks are tempered, return the entire mixture to the saucepan.
-
-
Cook the Mixture:
-
Place the saucepan back on the stove over medium heat, stirring constantly. Heat the mixture until it thickens slightly and coats the back of a spoon (about 5–7 minutes).
-
Do not let it boil.
-
-
Add Butter and Flavoring:
-
Remove the saucepan from heat and stir in the melted butter (if using) and vanilla extract (if using).
-
Add the powdered beef gelatin (if desired) and whisk until fully dissolved and combined.
-
-
Cool the Base:
-
Let the mixture cool to room temperature. Then transfer it to the refrigerator and chill for at least 4 hours, or overnight for the best results.
-
-
Churn the Ice Cream:
-
Once the mixture is chilled, pour it into an ice cream maker. Follow the manufacturer’s instructions for churning, typically around 20–25 minutes.
If you don’t have an ice cream maker:
-
Pour the chilled mixture into a shallow dish and place it in the freezer. Stir every 30 minutes to break up any ice crystals until the mixture reaches a creamy consistency (this will take about 4-6 hours).
-
-
Serve:
-
Once your ice cream reaches the desired consistency, serve it immediately for a soft-serve texture, or freeze it for a firmer consistency.
-
This carnivore ice cream is rich and creamy, perfect for those following a strict carnivore or animal-based diet. You can experiment with adding different animal fats or flavorings to suit your tastes. If you’re feeling adventurous, you could also try adding some beef tallow or duck fat for extra richness. Enjoy!
