A delicious, naturally sweetened cake packed with fiber and nutrients!
Ingredients:
- 2 cups (200g) rolled oats, blended into a coarse flour
- 1 teaspoon baking powder
- 1 cup (240ml) milk (any kind: almond, oat, dairy, etc.)
- 1 carrot, grated
- 9 dried apricots, rinsed with hot water and chopped
- 4 tablespoons raisins, rinsed with hot water
- 1 apple, grated
- 1 teaspoon cinnamon
- 3 eggs
Instructions:
1️⃣ Preheat & Prepare:
- Preheat oven to 350°F (180°C).
- Grease and line a cake pan with parchment paper.
2️⃣ Mix Dry Ingredients:
- In a bowl, combine blended oats, baking powder, and cinnamon.
3️⃣ Prepare Wet Ingredients:
- In another bowl, beat the eggs.
- Add milk, grated carrot, grated apple, chopped apricots, and raisins. Mix well.
4️⃣ Combine & Mix:
- Gradually add the dry ingredients into the wet mixture. Stir until well combined.
5️⃣ Bake:
- Pour the batter into the prepared cake pan.
